Subsequently, from the 40s of the last century, mozzarella and other dairy products, handmade in dairies with milk from cows raised in the Brown-Alpine
farms in Gioia, invaded, with a growing development, local markets, regional and national.
Currently dairy products of Gioia del Colle can be purchased and enjoyed in almost types of Italian
cities, now representing the pride of the national dairy production.

Puglia is a region that provides a habitat for several crops, among which the olive trees, wheat and vines. The coastal strip is the area with a special vocation to olive, that expresses five DOP and one third of the national
production of olive oil.
Moreover, Puglia is also distinguished by the high production of wheat, that have long been considered the "breadbasket of Italy".
This production expresses
its excellence in handmade pasta and the famous bread of Altamura PDO, dark and tasty product of popular wisdom. Of great value is also the fruit and vegetable production,
including the famous turnip tops, the basic ingredient of a dish famous.
Finally, we should mention the countless DOC that certify the high quality of wine production in Puglia,
excellent even in the wide variety of types.
The strength of agriculture in Puglia is the wine. The vine, in Puglia, is the favorite of the peasant culture and is, perhaps, the greatest source of wealth. The most extensive vineyards of
Italy are gathering on the lower terraces of the Murgia, in the San Severo (Foggia) and in the Salento.
The grapes that produce these lands appears on the tables in Italian and foreign big bunches sugar or transformed
into wines of Puglia as famous white wines of San Severo, the wines of Cerignola and Locorotondo as red wines of Barletta, Trani, of Santeramo in Colle and Gioia del Colle.
And, yet they
are wines of Puglia, the Malvasia of the Leccese, the asprigni Cape Santa Maria di Leuca, the liqueur wines Muscat and Aleatico. Today Apulia has 25 wines with denomination of origin of which 52
red wines, 28 white wines, 22 rosé wines 17 sweet and / or liqueur and sparkling wines 9.
The oil , typical of Puglia, was also used to power lamps and lanterns; confirming that we are the findings of a number of ships sunk in the Mediterranean olive oil. The oil of Puglia that is produced
is strictly virgin (virgin olive oil, with impeccable taste, acidity does not exceed 1 g. Per 100 g.).
The extra virgin olive oil from Puglia, depending on the olives from which it is produced, has various
features.
In Puglia the recognition DOP (controlled designation of origin) was given to four types of oil products in many parts of the region; Dauno, Land of Bari, Brindisi Hills, Terra
D'Otranto. These areas are further divided into eleven sub depending on the production area.
Stood at about 360 meters above sea level, Gioia del Colle, with its 28,017 inhabitants, it is situated midway between the Ionian Sea and the Adriatic. The location of particular prestige for the roads, since prehistoric times has given it a central role as a point of confluence and economic, commercial and cultural.
Different people have inhabited from the Neolithic period on its territory, leaving significant traces of their passage, now evident in the dolmen cemeteries diMasseria of Porto and in the excavations carried out in the areas of Castelluccia and Holy Mola. In the Byzantine period it outlines the first urban form in the current site of the city (of St. Nicholas suburb).
The monument, built in the Byzantine era with the Norman Riccardo Siniscalco d'Altavilla, in the twelfth century, and even more with Frederick II of Swabia, on his return from the Crusade (1228-1229), he took on the forms that still can be seen today, after restoration Pantaleo (1907-1909) and De Vita ( 1969-1974).
Inside, a vast and harmonious courtyard, overlooked by the monumental oven room with access to the Empress prison, scene of a grim as charming legend. Here Frederick II would have locked Bianca Lancia accusing her of treason and here the woman loved by the Emperor would partoritoManfredi, making self-sacrifice.
The Mother Church was built in the late eleventh century by Riccardo Siniscalco and dedicated to St. Peter. In 857 the building was heavily damaged following a massive earthquake. The reconstruction work was completed in 1983. In 1942 also collapsed the eighteenth-century bell tower, rebuilt in reinforced concrete, was equipped with electrically operated bells.
For centuries dedicated to Santa Maria Maggiore, the church keeps people above all need the cult of St. Philip Blacks, who attributed miracles that occurred during earthquakes and famines of the past centuries.
The original nucleus of the theater was built by the first half of the XIX century and designed by the Engineer Felice Ravillon. However its final resting place, was slow to come and only in 1899 thanks to the projects of the Engineer Vittorio Chiaia work ended with an excellent layout of the exterior and a refined interior of the auditorium of the three tiers of boxes, following the model of theaters of Puglia the late nineteenth century.
After the second war, the theater was used as a cinema, but recently has regained its former glory thanks to the restoration of the façade and the stage and the restoration of the three tiers of boxes, allowing them to host an intense theatrical activities, music and culture.

The tower house, dating from the fifteenth century, was probably built on a former medieval fortress, used as a lookout post and hunting of marsh birds (on the terrace there are openings for launching projectiles).
The building, about fifteen meters high, is marked by two stone cornices and looks particularly elegant in the highest part . Here, in fact, it's pretty obvious the Renaissance style.
It contains a rich testimony of rare and fascinating objects , even large , what was the rural culture : customs, traditions and crafts.
It is located in G. Di Vittorio street, near the Sacre Coeur church. (Collection MD Vito Santoiemma)
The distillery Paolo Cassano ranks among the most significant monuments of industrial archeology in Puglia. Its established historical importance and its perfect geometry enhance the nature of the recent restoration aimed at its preservation. In the year 1891 Paolo Cassano purchased the first machine for distillation.
Later he bought others, all the cutting edge for the time, by a firm in Milan specialized in the field . labels were found in the Old Black Rum sold in Jamaica and Igea liquor. The label of cognac Fides, the most famous enterprise product Cassano, reproduces the emblem of joy and a symbol of Italian Distilleries, which Cassano was the consortium.
The center of Monte Sannace is one of the biggest settlements of Peucetia. Inhabited since the beginning of the seventh century BC, is flourishing throughout the IV and III BC, is totally abandoned at the end of the third century BC, after Hannibal wars. The site is located 5 km away from Gioia del Colle towards Putignano-Egnazia.
The town is named, perhaps to be identified with the city of Thuriae spoken of the sources, however, they indicate that as a city "of Salento". The whole town is surrounded by four concentric walls circuits, mostly still visible.
It stands on Monte Rotondo , about 5 km from Gioia. It was built in 1309 by the Archbishop of Bari Romualdo and became part of the fief of Monte Sannace, where already stood another church dedicated to Sant'Angelo.
Today the church of SS. Annunziata with the surrounding land, are owned by the Mother Church of Joy. The trulli (from the late greek, dome) are ancient constructions in stone to dry, conical, the typical and unique proto origins of central and southern Puglia. Although in the developing areas of the trulli they come across
archaeological finds of prehistoric times, and foundations of stone huts dating from the Bronze Age, are not particularly ancient trulli.
This would be justified by the fact that rather than undertake the repair of the
same in case of disruption, they preferred to tear it down and rebuild it for economic reasons, reusing the material.
The oldest trulli of which trace remains there today were built in the sixteenth century near the
plateau of the Murgia Pugliese. The Trulli of Alberobello have been declared a UNESCO World Heritage Site.
